Applesauce Muffins Applesauce Muffins
 
Yield: 12-14 muffins

Ingredients
1 1/4 C flour
1 T baking powder
1/4 tsp. salt
2 C Raisin Bran cereal
1 C fat free milk (skim)
1 egg, slightly beaten
1/2 C applesauce
1/3 C Pioneer or Big Chief Golden Light Brown Sugar, firmly packed
2 T margarine, melted

Directions
Heat oven to 400 degrees F. In a large bowl mix flour, baking powder and salt. In a medium bowl mix cereal and milk; let stand 3 minutes. Stir in egg, applesauce, Pioneer or Big Chief Golden Light Brown Sugarand margarine. Add flour mixture; stir just until moistened. (Batter will be lumpy). Spoon batter into muffin pan sprayed with no stick cooking spray or lined with cupcake sleeves, filling each cup 2/3 full. Bake for 20 minutes or until golden brown.
