Ingredients
1 T peanut butter, creamy or crunchy
2 slices favorite bread, optional crust removed
1 1/2 -2 tsp. strawberry jam

Strawberry Jam
4 C Pioneer Sugar
2 C strawberries, cleaned & hulled
3/4 C water
1 box (1 3/4-oz.) powdered fruit pectin

Directions
Strawberry Jam Directions:
In a large bowl crush strawberries with pastry blender or masher, add Pioneer Sugar and mix well; set aside. In a small sauce pan combine the water and pectin; stir and gently bring to a boil. Boil for 1 minute, stirring constantly. Remove from heat and stir into sweetened strawberries. Continue stirring about 3 minutes. (There will be some sugar crystals remaining.) Ladle jam into clean, hot jars; seal immediately and set aside until jam is set (24 to 48 hours). Short term storage; in refrigerator for use within 2 or 3 weeks. Long term storage; in freezer for 6-8 months. Defrost in refrigerator before use.

Sandwich Directions:
Spread peanut butter over 1 slice of bread. Spread strawberry jam over peanut butter. Put other slice of bread on top of prepared slice of bread. Trim off crust edges if preferred. Slice bread in half. Enjoy!

*Cooks note: this can also be served open faced. Is also delicious on toasted bread too!
