  Kelly's Blueberry Bread

Ingredients
2 C flour
1 C Pioneer or Big Chief Sugar
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
2 T shortening
1 egg, beaten
boiling water (approx. 2/3 cup)
1/3 C orange juice
1 C fresh Michigan Blueberries (or thawed will do)
1/2 C walnuts, chopped (optional)

Directions
Preheat oven to 350 degrees F and grease a 9 x 5-inch loaf pan; set aside. Mix first 5 ingredients in a large bowl until well blended. Next, blend in shortening. Stir in beaten egg. Next, add enough boiling water to the orange juice to measure 1 full cup. Add this to the other ingredients and stir well. Finally, add the blueberries and nuts (if desired) and stir gently. Pour batter into prepared pan and bake for 60 minutes. Cool slightly before removing from pan. ENJOY!
