OATMEAL TOFFEE COOKIES

Ingredients
1 C butter, softened
1 C Pioneer Golden Light Brown Sugar
1/2 C Pioneer Sugar
2 eggs
1 tsp. vanilla extract
1 1/2 C flour
1 tsp. baking soda
1 tsp. cinnamon
3 C rolled oats
1 C toffee bits
3/4 C nuts, chopped (optional)
Directions
Preheat oven to 350 degrees F and spray cookie sheets with non-stick cooking spray or place parchment paper on sheet; set aside.
In a large bowl, cream together butter and both Pioneer Sugars. Beat in the eggs (one at a time) and stir in vanilla. Combine flour, baking soda & cinnamon in a separate bowl and gradually add to the creamed mixture. Stir in oats, toffee bits and nuts. Drop by spoonful onto your prepared cookie sheet. Bake 8-10 minutes. Remove from oven and cool on cookie sheet for a couple of minutes then place on cooling rack. Store in airtight container when completely cool.
*Cooks note: some also like it with raisins.
