Baked Carolina Barbecue Chicken

Ingredients
3/4 C Pioneer Golden Light Brown Sugar
2 T vegetable oil
1/2 C yellow mustard
1/4 C cayenne pepper sauce
1/4 C cider vinegar
salt and black pepper
4 boneless, skinless, chicken breasts

Directions
Preheat oven to 350 degrees F. Grease a 2-quart casserole dish; set aside. Salt and pepper chicken (to taste) and place in the prepared pan. Place in the oven and cook until internal temperature reaches 150 degrees.

Meanwhile, mix together Pioneer Golden Light Brown Sugar, vegetable oil, mustard, pepper sauce and cider vinegar in a sauce pan. Heat over medium heat stirring frequently. Once the sauce reaches a boil, reduce heat and simmer.

When the chicken reaches 150 degrees, spoon 1/2 of sauce over the chicken. Continue baking for another 5-10 minutes or until sauce is baked on. Use remaining sauce to pour over chicken when serving.
